Healthified Yogurt Pancakes

The modified cabbage soup diet is now over, because we all agreed to only do it for 4 days. So, instead of having soup for breakfast this morning, I had some pancakes!

They were really good, and incase anyone is wondering, no, I do not put toppings on my pancakes. Personal preference. Plus, these pancakes are already good enough without the added sweetness!

Ingredients:

•50g oatmeal

•1/2 tsp baking powder

•3 egg whites (or two whole eggs) at room temperature

•3 tablespoons (65g) yogurt of choice (You can also choose flavored yogurt if you want flavored pancakes!)

•PAM cooking spray*

*PAM cooking spray isn’t mandatory, but it’d be nice.

Directions

1. Grind oats to a flour. I recommend making big batches oat flour in advance so that you don’t have to dirty your food processor every time you make pancakes. It’s also a lot more convenient.

2. Add in baking powder.

3. In a different bowl, separate egg whites and beat until bubbly (you can choose to save or throw away the yolk).

4. Add in yogurt and mix.

5. Add into oat and baking powder mixture and mix until just incorporated. Image

6. Spray PAM onto preheated pan/griddle. Now you’re read to cook!

7. Pour 1/4 cup of batter onto pan and leave it alone for 2 minutes. Flip and let it cook for another 2 minutes. Repeat for the rest of the batter and transfer to plate.

Yes, one pancake has a different color :-( Kind of embarrassing, but they were still great! Just comes to show how eating clean doesn’t mean giving up the things you love most in life! It’s just about making better and healthier decisions ♡
