Healthified Sponge Waffles*

Hey guys! So the other day I had pancakes for breakfast, so I thought that today, I should have waffles! However, waffles are known for having a lot more sugar and fat compared to ordinary pancakes, so I decided to healthify a recipe and try it out… It turned out great!

What You’ll Need:

•5 eggs

•115g wholemeal flour

•1/2 tsp baking powder

•Stevia in the Raw – Cup for Cup

•5 tablespoons of warm water

•1 teaspoon vanilla extract

•PAM cooking spray

•A waffle iron

Directions

1. Preheat waffle iron and grease with PAM cooking spray.

2. In a bowl, add in egg yolks(do not throw away egg whites!), sugar, water and vanilla extract. Mix well.

3. In a separate bowl, mix baking powder and flour.

4. Pour the liquid mixture into the dry ingredients and mix until just incorporated

5. In a separate bowl, beat egg whites until stiff. Fold into batter.

6. Pour in batter into waffle iron, a bit more than 1/4cup per waffle

7. Let it cook for around 3 + 1/2 minutes.

8. Repeat for the rest of the batter. Makes around 6 waffles.

9. Enjoy your healthified, wholemeal sponge waffles!
