Healthified French Toast

I remember when I was a kid, my mom used to always make french toast. However, for the longest time ever, I didn’t eat it for a long time and I have no idea why. Maybe because I never really craved it. However, yesterday night, I really did!

Serves 2 People


•4 slices of wholemeal bread (at least 1/2 inch thickness)

•1 egg

•1 egg white

•1/2 tsp cinnamon

•1/4 tsp nutmeg

•1/4 cup milk of choice (I used skimmed milk)

•stevia or artificial sweetener of choice

•1/2 tsp vanilla extract


1.In a bowl, beat egg and egg white extremely well. Add in milk, cinnamon, nutmeg, sweetener, and vanilla extract and mix.

2.Heat pan and grease with PAM cooking spray (or a tsp of olive oil) and use a tissue to spread it out well

3.Transfer egg mixture to a flat but “deep” plate so that it doesn’t drip over the edges.

4.Cut slices of bread in half (diagonally) and dip in egg mixture for at least 10 secs on each side. Make sure the pan is heated enough and when it is, place the bread flat and let it cook on each side for 3-4 minutes.

5.Transfer to clean plate and serve (you can also choose to serve with some light maple syrup as well!)
