Healthy Vanilla-Strawberry & Chocolate Chip Pancakes

well, happy chinese/lunar new year for those who celebrate this holiday! i didn’t have school yesterday nor today so today feels like a sunday! and every few minutes i literally forget it’s not…

so, in the spirit of “i think it’s sunday even when it’s actually not” i decided to make some pancakes for breakfast.

i was getting a bit tired of chocolate (jk, i can never get tired of chocolate), so i decided to try something new. i made some healthy vanilla pancakes with strawberry yogurt and chocolate chips inside and they came out so fluffy and moist, you can’t even tell that they are unhealthy! :o

when i first started making pancakes, they always came out so dense and flat and tasted mushy and gross. but, practice makes perfect (or near it at least) and i’m now making pancakes that my dad won’t call “bird food”.


healthy vanilla-strawberry & chocolate chips pancakes (with more yogurt and granola)

•4 tbsp wholemeal flour (35g)

•1/4 tsp baking powder

•1/8 tsp baking soda


•1 egg at room temperature

•60g strawberry yogurt (~4 tbsp)

•1 tbsp skim-milk

•1/2 tsp vanilla extract


•10g semi-sweet chocolate chips

1. mix dry ingredients well in a medium bowl. in a separate bowl, beat egg, yogurt, milk and vanilla extract well together.
2. fold wet ingredients into the dry ingredients, while adding chocolate chips. do not over mix and do not worry about small lumps.
3. lightly grease pan/pancake griddle with PAM cooking spray or a little bit of olive oil/coconut oil, and let the pan heat up. when it’s hot enough (test by splashing a little bit of water and if it sizzles and evaporates quickly, then it’s hot enough), decrease heat to medium-low, and pour 1 heaping tbsp of batter. you can fit multiple pancakes onto one pan.
4. wait 3 minutes for pancakes to cook on one side, flip and let it cook for another 3 minutes.
5. serve warm with some light maple syrup or more chocolate chips! even though personally, i think they’re good enough to eat alone :)
6. brag to family members that you got to eat really delicious pancakes for breakfast and they didn’t (.. perhaps not..?)
